Zucchini Bread

Zucchini has been growing in abundance in our garden this year.

I. Love. Zucchini.

A couple of days ago, while my kids were at school, I thought I'd be a good mom and bake them some healthy, low-fat zucchini bread. A surprise for after school, because my kids love the stuff!

The problem was that I didn't have a low-fat recipe. My favorite zucchini bread recipe happens to not be healthy at all. That happens when there's as much oil as zucchini in the bowl. But boy does it taste yummy.

So, I searched the internet and found a weight watchers recipe for low-fat pumpkin zucchini bread. Sounds good, huh!?! I was excited to try this! I love zucchini bread and I love pumpkin breads, so this would be a good combination.

I grated all the zucchini and toiled and labored. I snuck a taste of the batter. It wasn't so good. But I was confident that once it baked it would be delicious.

Wrong. It was full on disgusting. D.I.S.G.U.S.T.I.N.G.

I was so sad.


But I was determined to not give up.

So I searched some more and found a recipe for low-fat chocolate chip zucchini bread. Yum! The author of the recipe promised that she had perfected it and that everybody from her husband to her 1 year old loved it. So I decided to trust her.

And again I grated zucchini.

Zucchini bread is a lot of work!



This recipe was worth every effort. It turned out beautifully. The taste is magnifico! And it's low-fat and made with whole wheat flour. Oh. My. Yum!

Our neighbors just brough over 3 hurkin' zucchinis from their garden. I need to make this!

I haven't tried the zucchini bread recipe that you are recommending here, but I am, at this very moment, baking the Pumpkin Brown Butter Cupcakes that you submitted to the cookbook that Julie Hess put together. Oh my goodness! these cupcakes smell SOOOOOO good baking! I cannot wait to try one! : )
